Hi! I’m Paola Velez, a millennial multi-hyphenate who can never stop working. (Thanks capitalism!)

I’m an award-winning pastry chef, Food & Wine Best New Chef, author of Bodega Bakes, chef-owner of Providencia, DŌEKÏ DŌEKÏ, and founder of Small Orchids Inc. and BAR (the world’s largest virtual bake sale.)

In the 20+ years that I’ve been working in professional kitchens, I’ve learned the nuances of recipe creation — to understand the ratios of a recipe and why it works. This foundation lets me lean more into my creativity when coming up with new recipes, and I find inspiration in a million different places.

We all draw inspiration from somewhere. Like the old proverb says, “There’s nothing new under the sun.” Chefs use cookbooks to jolt their creative process, influencers are the screenshot police, borrowing recipes word for word for the chance to be seen in this virtual gauntlet. But in a world where digital I.P. and viral trends reign supreme, how does this translate to making something original?

Friends, I’m giving you permission to steal my recipe — master the techniques, spur your imagination, grow as culinarians, and make it your own.
